Hey, guys! Christmas is quickly approaching which means you are probably scrambling to find some great cookie recipes for your friends and family! Today I am bringing you one of my favorite recipes courtesy of my brother-in-law. His entire family is Italian, so of course, they have a family recipe for Italian Ricotta cookies. His family makes these cookies for every special occasion and they are always a hit. His family nicknamed these cookies, “snake cookies.” The recipe is so incredibly simple, and the frosting is even easier to make! We made these cookies the other day along with our traditional sugar cookies with cream cheese frosting, and I cannot get enough of them! Here is the recipe:
Italian Ricotta Cookies (Snake Cookies)
6 cups flour
6 tsp baking powder
1 cup Crisco
1 1/2 cups sugar
1 tsp vanilla or anise
Combine flour, baking powder, and sugar into a bowl. Cut in crisco. Add eggs and vanilla and mix well. Knead dough until thoroughly mixed. Pull off pieces of dough and roll into balls. Bake at 350 degrees for approximately 15 minutes.
Frosting: Mix powdered sugar and milk together until you achieve a slightly runny frosting. Spread on cookies and then add sprinkles.
